Today I’m going to be sharing with you how to make the best red pork tamales ever!!!! Seriously I tried many tamales and this recipe continues to be the best!!!! Making tamales is time consuming but it’s seriously so easy to make them!!! Using a stand mixer makes this recipe so much easy! But if you don’ have one, you can use a handmixer or your bare hands, but let me tell you be ready to get a good arm workout! Because it does take a good time (30-1hr) to get the masa to perfection ! Mixing is very important because It allows all the ingredients to get well incorporated 😅 when we make tamales my dad is the one that mixes the mása because it requires a lot of work! Regardless if you mix by hand of mixer the masa HAS to float, that’s how your masa talks to you and let’s you know that the consistency is perfect!! Don’t skip it yessss you can make your tamales with out your masa floating but you will need a sip of soda after each bite, yesss coke and tamales are the best combination but you still want to be able to enjoy the tamal 😉

Tip: make sure your masa floats, that’s how you know you have the best masa for tamales 😊😉 if your masa don’t float add a little more liquid then keep mixing for another 5 minutes 😉
Another tip: try to build a pyramid with the tamales rather than standing them up I learned when you do the the filling goes down making the top of the tamal skinny with no masa or filling
You can use any cut of pork just make are to remove most of the fat as for pork is already fatty!
I forgot to mention, but please strain the chile sauce 😊
Ingredients: makes 35-40 tamales
Masa:
6 cups Instant corn masa for tamales
6 cups pork broth
1 1/2 cup lard
5 tsp baking powder
Red chile filling:
20 New Mexico Chile pods or guajillo New Mexico red bag is my favorite !!!!
3 chile ancho
12 tomatillos
7 garlic cloves
1 1/2 tsp whole cumin
1 tsp Salt 1 tbsp chicken bouillon
Meat:
5 lbs pork shoulder
1 onion
1 head of garlic
4 bay leaves
2 tsp whole black pepper
2 tsp all spice
2 tbsp salt 1-2 tbsp chicken bouillon
5 whole cloves
16 cups water
1 serving of love 💕

We tried your recipe this past weekend and couldn’t get the masa right. It wouldn’t float. And when we put it on to steam the masa didn’t change. We are at 6800 ft. Do you think that makes a difference?
I made this but my masa didn't come out thick enough I probably messed up some where I'm trying again today
Like your makeup…not too much salt and not too much pepper! Lol why do pretty women get talked into makeup? There face only deteriates after each application, until your like a drug addict…fixing for that powder, lipstick, curls, eye shadow, etc. Not to diss you..but yeah, natural beauties irritate me Painting they face to match the Kardashians. NO – MAKE UP…Commercials and movies made pretty women insecure.
Hi Claudia, question in video you mix the chile in broth. But I see you use broth without chile. I am little confused , sorry.

Claudia, I'm going to try this recipe. Question…..You said steam for around 2 hours….during that time do you have to keep adding water to the steamer?? How do you know when to add water to the steamer or do you not have to?? Thanks in advance. This will be my first time trying to make tamales.

I'm Asian and made tamales your way because I couldn't find decent, good tamales. My friends came over for poker night and thought I bought them from an old "tamales lady" that used to go around selling em in parking lots in my area. I haven't seen her in years, and hope she is doing well.

Hey Claudia I have a question for you. If i lost the inside of the pot can i just put a plate to separate the water from the tamales? Im doing the prep right now so i need a substitute for the rack or grate however its called.
Can I substitute something for the lard?
Ok so I made tamales but for some reason my masa didn't float I added more water an I mixed more still didn't float what am I doing wrong??
