This is not "penne all'arrabbiata". As an Italian I can't stand people who give their recipes Italian names but don't respect the original Italian recipes.
All the people who come to Italy get stunned by the goodness of original Italian food So why everywhere someone always tries to modify original recipes at his/her taste?
Just call it " penne someone's way", then .

A lot of interesting ideas here that could be adopted for any sauce recipe. Pepperoncinis? Yeah. Might even venture to try anchovy paste.

I follow a couple of Italian food guys, and this is NOT how they do all' arrabiata.
Not saying this might not taste good, but this is not penne all'arrabbiata. If you are gonna call it that, make sure it is …that, otherwise just call it penne with hot tomato sauce or whatever. Peperoncini in vinegar, tomato puree, pecorino in the boiling sauce, sweet paprika in the hot oil, OMG, nothing to do with italian cooking.
Are the people in the back really working or are they just walking around for show?
I like the pepperoncini's. I went a step further and substituted jarred cherry peppers for the paprika along with a slug of liquid from the pepperoncini and cherry peppers and served with fettuccine. Turned out great…!?!?!
Pepper is Pepper and Paprika is Paprika🤦♂️

Hi. When you declare , you have to know that there is protocol for the recipes, often legally deposited – like "ragù alla bolognese either by now codified in a famous & long tradition. If you desire change them, then you have no right to give them those names. You have to declare that your recipe is a variation, and all goes good. It's correct, no problem.
Bu, if you use variations in a some number, your recipe stops logically to have the right to be called with their titles. The taste change considerably.
You who have totally, changed all the taste, the "soul" and the look of a classic recipe, until to have ruined it. Very painful to see…)
Penne all'arrabbiata
INGREDIENTI
250 gr. penne
400 gr. pomodori pelati( tomato pulp)
1/2 peperoncini freschi(chili)
prezzemolo tritato(parsly)
1 spicchio d'aglio(fresh garlic)
extra virgin olive oil
sale grosso (sea salt)
sale fino(kosher salt)
extra virgin olive oil
NO parmesan or pecorino, grated!
I prepared this dish and substitute capers (I had no anchovies in stock) and it was everything as described. Heat and savory, gorgeous to plate. 🥰
