Just a note: quinoa is NOT low in carbs. People will often say that, but it is not accurate. It has as many carbs as white rice. The benefit is it has the highest nutrition of all the carbs. And it raises blood sugar more slowly than other carbs.

For anyone wondering about Costco pesto-they’ve clarified in the past that they don’t generally include anything from Costco in their reviews, as it’s a membership grocery that doesn’t exist in all cities. They’re going for the brands they think anyone in the US may be able to get a hold of.
Yes to both recipes…
This Portugese-style beef stew looks delicious, but just doesn't look like a stew to me… not much liquid, and what little there seems more like a jus (as Julia stated). I'd make it, but I think I'd treat it like a braised meat recipe, and serve with rice or noodles or quinoa!!!!!
Why not just add the chorizo to the pot later in the cooking process? Then you could eat the stew hot, and as soon as it's done.
Why not use the Portuguese, Linguića? That's the real deal.

The stewed beef looked good, but it is missing some veggies to really call it beef stew, for me anyway. I would add the beef to the quinoa stew and call it a meal! 😎
