How do I know the measurements
Brine salt/water ratio is the most important bit here, but there's no such information here.
I usually air fry my wings because I find they are the best method when I am craving a last minute crispy win. Air frying is also the least time consuming method as well! Also, as a bonus, the house doesn't smell like fried food afterwards and they are healthier!
What would be the replacement of vodka in the wet batter
chicken from the store is already brined. Maybe soak it in water, but not sure about adding more salt.

Invest in a deep fryer instead of a Dutch oven. You can buy one for $50. Not only are they easier to use because of the temperature control and baskets, they are safer than putting a pot of hot oil on the stove.
You only need salt and water for the brine..no sugar, no vinegar.
Never use canola for frying. The stuff is gross. Go with something with a higher smoke point…

tip for tossing if you got a metal bowl and a pot lid that can fit it works well to use it like a shaker and to keep the heat in for serving

I do not understand going to all the trouble and using all those hacks to make Buffalo wings crispy, only to drown them in sauce.
I love using a wet brine for chicken breast too! It makes the chicken so moist 👌
I've heard about a viral hack where you put about a cup of flour into a pot of hot oil, which the flour until it's completely dissolved in the oil, and then you drop your seasoned chicken in, and the chicken is supposed to get both battered and fried at the same time. I wonder if anyone else has tried it yet?

When I find wings on sale, I buy several pounds. I cut them and bag them up in meal size portions. I put all the wing tips in a bag and freeze them for chicken stock.
