that's exactly the way I make mine.but I flour the fish first
I tried this and for 1 cup of flour I had to add 3 cups of water and it still was thick as a pancake batter; also, the batter did not stick to the fish very easily, I had to dip it in there a few times to coat it. But, the results were very delicious. I'm guessing I need to pat the fish dry first??

No, no, no, no. All dry ingredients need to be sifted together! The proportions are all wrong!
I should have known from the start that the ratios on this were wrong. Follow the directions and it makes SLUDGE. Not suitable for dipping fish in. Long story short: Don't bother. Go out and get yourself fish and chips from a place that makes it. It's like drywalling. Pay someone else to do it. Make a roast. Make pasta. WAYY too much work when you pull it out of a boiling pot of oil to find the fish has flown apart like a crashed airplane. Not to blame it on this site…but just don't bother.
