Ingredients:
1 1/2 cups all-purpose flour/plain flour (180g)
2 tsp. ground cinnamon (5g)
1/2 tsp. salt (2g)
1/2 tsp. baking soda (2g)
1/2 tsp. baking powder (2g)
1 large egg
1/2 cup oil (vegetable, canola, olive, coconut, etc.) (120ml)
1 cup white granulated sugar (200g)
1 1/2 tsp. vanilla extract (7ml)
1/3 cup sour cream (80g)
1/2 cup chopped pecans or walnuts (65g)
1 cup grated zucchini (150g)

Tools:
Whisk or hand mixer/stand mixer
Spatula
Bowls
8×4 inch bread pan
Shortening or cooking spray for pan
Wire Rack

    I've been making zucchini bread for years but so glad I watched this. I'm going to try your sour cream tip. I've never heard of that.
    My garden gives me plenty of zukes before the squash bugs and borers take my plants. When I bake Z-bread, I bake about 6-8 loaves. I use foil disposable bread pans.
    I wrap my extra loaves tightly in plastic wrap, then foil, then slip them into a zip-lock bag & pop in my chest freezer. They keep for 3 months or so. When thawing I take it out of the zip-lock but leave the plastic wrap on it until it is completely thawed.

    JUST an FYI for anyone that gardens. Trombone squash (while green) works too and the darn bugs don't devour it as much as they do zuchinni plants.

  2. Evening Matt, all I can say is WOW!! That zucchini bread is the bomb! It’s like cake!! Lol
    My hubby is watching carbs, are there any low carb options , almond flour? Any substitutions? Ty! Have a safe and great evening!
