  1. Thank you for uploading this video Jeremy, I have that exact NexGrill and I did a brisket on it last year…It did turn out ok, but i was constantly standing by it just to make sure everything went ok, but with these tips and tricks, I hope my next brisket cook will go a lot smoother

  2. When it comes to blowing on coals. I see people kind of checking out with that comment. But if you’ve ever camped blowing on coals in the fire is pretty common in fire management. As such may I recommend using a “pocket bellows”. It’s a tube that extends like an old radio antenna. You can focus and direct your breath like a bellows and it keeps your face out of the fire. Worth looking into if this is the situation you’re in.

  3. I know this video is old by YouTube standards, but it is exactly what I was looking for. Being in Canada even an Oklahoma Joe Highland is $700 before taxes😢. I was planning to buy this exact COS in a couple of days just to give offset smoking a try, but was on the fence. After seeing your brisket video and this fire control video I will be buying one in a couple of days to learn on. I will also start trying to figure out how to get, build or buy, a better backyard offset for less than an arm and a leg.

The way I use to start a fire in my chimney, I grab a few paper towels then I wad them up in a ball leaving a wick then I pour cooking oil on the ball saturating pretty good then I light the wicked part that hasn't gotten any oil on it. Works good for me and we always have paper towels and cooking oil sitting around, and a small bottle of cheap cooking oil last me the whole year and I grill at a lot. A ball about 2 inches in diameter soaked in oil will burn for about 20 to 30 minutes.
