"using a sharp knife". My knives all suck bro…. Ugh. You get what you pay for I suppose.
It works better fyi if you buy deboning knife then a chef knife it makes it looks pristine compared to how much fat you left on that. And skirt steak isn't in the end worth buying it's a tenderloin or inside round.
