does the skin get rubbery when you cook it at such low temps? what about smoking it at 350, and being done after 80mins or so?

Where did you buy this exact heat deflector? All I can find are metal ones and ceramic ones that have all sides open. I like that this one only keeps one side open for smoke.

I always worry about letting the BBQ get too hot, and then today, I lost patience after almost 2 hours and moved the chicken directly over the charcoal just to get the internal temp up to 160. Turned out really nice, though.
