Try a mayonnaise bird. There's a good chance you'll never do it any other way. Add some Sriracha to the mayonnaise. You won't taste either flavor, just the moisture. Make sure you lift the skin and lather up the bird really well. You'll thank me later.

i used to do it this way. now i just separate the bird and cook it accordingly. this way we can use all of the unused parts for gravy.
