We smoke our turkey breast using the exact rubs used in this video, the only exception is we smoke our turkey breast in an offset 1000 gallon offset. This recipe is so simple and super tasty. I smoked this turkey breast on my Yoder pellet smoker but you can cook this on whatever smoker you have.

I haven't smoked turkey breast. I bought a bone-in breast. Should I smoke it whole or remove from the bone first?

Great vid on NEW turkey smoking techniques (because lets be honest, everyone wants turkey breast the most, so why not focus on just breast cuts). I think a nice post-smoke add is adding some melted butter with rosemary drizzled on the meat before serving , so you can get that aroma-add to the INTERNAL meat. This is what Mad BBQ Sci. and Franklin do
The turkey breast is done cooking at 145 anything over that and you're overcooking it and drying it out, there is supposed to be a little pink in turkey breast

Put 3 slices of this turkey on sourdough. Then add 4 slices of thick cut pepper bacon. 2 big slices of tomato. 1 handfull of shredded Asiago Romano. Grill the sandwiches with the outsides lightly buttered. Ta da!! Grilled cheese turkey club. Banging! Make 3. Eat all 3 by yourself.

You pulled at 160 degrees. However, the "acceptable" poultry temperature is 165 degrees. Im always shooting for juicy meat. How do you justify the 160 degrees? I ask for knowledge not to be contrary.

Hey Joe, I followed this technique for a local radio station bbq contest this morning. I de-brined all day, then used a rub of my own creation, made with hot green chile powder. Smoked in an offset smoker using mini pecan splits.
Took it off at 160 internal and let it rest wrapped inside a cooler for 3 hours. The judges loved it, but not enough to win a prize. It’s the very first bbq contest I ever entered.
