Topping sweet potato casseroles with marshmallows is common practice, but the mini varieties are coated with cornstarch, leaving them chalky, and the large sizes bake up too thick and goopy. (Yes, there is such as thing as too much marshmallow topping).
We find that using half of a large marshmallow is the best way to go. To cut them in half, grease a pair of scissors with cooking spray to keep them from sticking, and cut through the equator.
With this method, your sweet potato casserole will boast the creamiest topping, and the ratio of topping to filling will be perfect.

I like anything Dan does. And I’m a die hard anti-marshmallow on sweet potato person. But this year we’re simplifying so I’ll give it a try.
So the comments on this video are pretty bad for no reason… The marshmallows provide this browned textural layer that's quite appealing. My comment was originally going to just mention washing off the starch but damm people most of these don't even contribute.
People are allowed to eat what they want without other people telling them they have no taste, or that it's disgusting, etc etc. Everyone here needs to grow up and stop fussing over things that dint affect your life in the slightest.
Sweet potatoes are fine on their own, you don't need to go mucking them up with marshmallows.
Putting marshmallows on sweet potatoes is like putting ketchup on steak.

Anyone who puts marshmallows on their potatoes doesn't care about corn starch flavor, or any other flavor for that matter.
