Hey guys love the channel but that roast was over cooked and the "crust" looked burnt af, also of course the the bones peeled right off they were cut off suring processing and then tied back on.
I’m going to do a more balanced approach to what I see (we on the other side didn’t get to taste)
I would never put that coffee grind rub on direct heat, it will be very bitter and my friends that is straight up burnt. Only the sliced portion gets the sear, often using ghee or beef tallow.
Liked that you got your internal temps nice and even, but when sliced the meat inside looked a bit over or not evenly distributed throughout the cook.
