I Asked Chefs How They Make Burgers At Home



Burgers are elite, and everyone has their own way of making them. I asked a few chef friends how they make the perfect homemade burger, and put their recipes to the test. Then, l took my favourite parts of each to make the ultimate chef’s burger.

Which burger is your favourite, and more importantly, what is a burger?

FALLOW –

– brioche bun, buttered, toasted
– kombu seasoning burger sauce
– lettuce leaves
– dairy cow beef mince patty
– homemade cheese slice
– diced white onion
– crinkle cut pickles

BEN SHEWRY –

– Sesame milk bun, buttered, toasted
– tomato sauce
– shredded iceberg lettuce
– beef mince patty (80/20 fat %)
– cheddar cheese slice
– fried egg
– sliced white onion
– bacon rashes
– sliced cooked beetroot
– sliced pineapple rings

DAVID CHANG –

– long baguette, sliced into portions, inside toasted
mayonnaise
– 2 x 75g beef mince burger patties
– grated American cheese
– shredded iceberg lettuce
– green chilli sauce
– tomato slices

CURTIS STONE –

– potato bun, buttered, toasted
– shredded iceberg lettuce
– tomato slices
– 125g aged beef mince smash burger patty
– caramelised onion
– raclette cheese slices
– kimchi burger sauce
– burger pickles

ROSIO –

– Crusty long white bread roll, inside toasted
– habanero mayonnaise
– refried beans
– Cochinita Pibil (marinated slow cooked pork shoulder)
– pickled red onions
– coriander leaves

MATTY –

– brioche bun, buttered, toasted
– iceberg lettuce leaves
– tomato slices
– sliced white onion
– sliced dill pickles
– 6oz beef mince patty
– 2 slices American cheese

ANDY –

– Potato bun, buttered, toasted
– habanero mayonnaise
– dairy cow beef mince patty, medium thickness
– bacon rashes
– grated American cheese
– sliced white onion
– crinkle cut pickles
– kimchi burger sauce

  1. I lived in Gisborne NZ for a while and the Oz burger with the lot seemed to be the way they ate it there as well: beetroots, egg, bacon, pineapple, onions, cheese etc. Seems like your two countries have more in common than you would like to think 😉

  2. You're probably my fav chef, Andy. But beetroot needs to be in a burger with the lot, maybe not soo much pineapple. Also 6 burger recipes in 11 mins is awesome, Marco Pierre White would post a 45 minute video showing how to make Bechemal sauce.

All those look good, just 1 ingredience I really disagree with, tomatos nope, no, never, and that is simply because I spend 4 summers picking tomatos as a student, and had extra job after normal workhours to go through the greenhouses and pick all the ones that were starting to go bad/rot, really put me of fresh ltomatos
    'Blend them, and in ketchup I dont mind, but nope, I will not eat them in burgers, salads etc.

  4. I’m sorry but what exactly is Rosio doing in this video? I feel like that doesn’t at all qualify as a burger? Unless I wasn’t paying attention wasn’t literally every other one an actual burger? Why are we making some pork shoulder sandwich during a burger video? If I want a pork sandwich tht looks like a great sandwich but this is a video on burgers?

  5. My wife got me onto "no ketchup", and she's right- it makes a savoury dish too sweet. We always leave it out when getting shitty takeaways, it makes Whoppers taste much better. Mayo & dijon mustard, or special sauce or whatever – why would you need tomato sauce (ketchup for you 'muricans) as well? It's so sweet, it just doesn't go with the rest of the burger.

  6. I'm sorry but beetroot and pineapple on burger is one of my favorite things about being an Aussie. When you got a huge amount of salty greasy meat. Nothing cuts through it better than a nice sweet piece of beetroot or pineapple.
