I live in South America where people grill meats but smoking meats isn't really a thing. The only offset smokers we can get are these cheap ones shipped down from the US. It's just my wife and me, so I can't justify having some giant custom built trailer smoker. I have one of these, and as long as I babysit it, it works. I use laurel wood (where bay leaves come from) or local eugenia, which has its own good, distinct smoke flavor.

I got the chargriller that he saw for 199 and said “this thing terrible” my face went from (oh he saw my smoker let’s see what he says about it 😊) to (damn 😕) 🤣🤣

I've smoked fantastic meats on an Old Smokey grill/smoker. It's more about what you know than the equipment.
Mine is smaller. I've been wanting to cook a brisket for a while, but it's an intimidating task. i dont want to mess up such an expensive piece of meat
Just ran across this. 7 Years ago I bough a char griller offset for about the same price and I still smoke with it today. It's getting to be almost end of life so I will upgrade just not sure what. It was good to see someone using a cheap offset to make something good!!!

Bummed we didn't hear what temperature he was cooking it at. Since he kept opening it i wonder what his ideal temp was.
BBQ is almost 100% on the pitmaster. You can smoke in a 55 gallon drum, you can smoke in a hole in the ground, you can smoke in anything so long as you know how to control your fire and airflow. I've used this offset smoker since last year and it's great, especially for ~$100.
Lmao seeing the mask brought back the lunacy of that time. What a joke that was.

This is a result of skill over equipment. BUT it also showcases that if you do research and execute properly, you can achieve great results with garbage equipment.
I bought a $118 grill with offset and have not been disappointed yet!

Jeremy…… the principals are the same for guitar. The guitar matters way less than the player themselves. You can still make good music with the cheap stuff. Even though I have really expensive stuff. 😅

The best bbq spread i ever did was on a cheap offset but sadly the offset box despite regular cleaning was prone to rusting through after so long – around 10-12 long cooks, i found. Got a Traeger after snd it was reliable but boring and i hated not being able to sear. Currently playing with a small Akorn Jr kamado and loving it.

If that doesn't make your mouth water nothing will. It's December 23 2024 and in 2 days I'm doing a twice smoked Christmas ham in an offset that looks as cheap and maybe cheaper and I'm really doubting this smoker. Thanks to u I know there's hope. I'm basically just reheating with smoke. I think I'm using wood chips with charcoal just because that's what I have. Theres not many videos with these cheap smokers. Thanks for the info !
I regularly make bomb ass brisket/pork butt/chicken on my cheapass home depot offset.
That 199 smoker is now 300 at Home Depot smh 1:42
On these cheap smokers I usually just throw one of those disposable foil pans under the rack with a bit of water. It catches all the grease and keeps things from drying out too much

There are a ton of ways to make the cheap smokers better. food grade high temp silicone to seal up the seams, gasket/seal for the door will allow it to hold heat and smoke better.
I “season” my fire box with oil on the outside as it burns kinda like you would a cast iron pan to help minimize rust and it seems to help a lot and keeps the color dark
I have a nicer smoker that I use for longer cooks like brisket. My wife got me a similar model for regular use and I tried it out with a rack of baby backs. I need to figure out the fire control but it worked well and I've honestly never had such a defined smoke ring on ribs
