I make this with store bought flour and it's just awesome.
But I can't duplicate this with fresh milled flour – even after running it through a 60 mesh strainer.
What does it need? I've heard more yeast and I've heard add gluten. But I still cannot get the results (like this video) like I get with store bought flour.
