Al, just curious. This, as you say is more Tex-mex influenced bbq. Why is there no chili? In fact, why do you never see chili on any of the Texas bbq platters? Chili is supposed to be an official food of Texas. The bbq YouTubers make chili and discuss the no beans vs beans controversy, but for some reason chili doesn’t seem to take a role in Texas bbq, unless those frito pies you often see are the chili. Please elaborate if you can.

Best BBQ in Texas.
I love making tacos including birria tacos after brisket or pulled pork. I no longer make BBQ pulled pork. Sauced after, so I can make tacos. This looks great. Make sure you keep at your "best job in the world" because it gives me great ideas.
