The smoker design sounds great on paper, but i built one years ago with pipe to smoker and you have to build such hot fire to get smoker hot it burns your fire box out!!

The only question i have was what temperature they were cooking the brisket? J would think that it would be 225-250 at 10 plus hours.

God I have never seen such dull ass BBqers in my life…. These guys got lucky and already had the greatest BBQ Pitmaster to steal from and they just trial and errored the best guys before them….

I can only imagine that tallow is for looks. That’s why brisket gets you full so quick. I prefer a “no cuts” brisket. Just cook it good and you can eat without a stomach ache.
