This is how BBQ stories should be, but Louie Mueller wouldn't be what it is without Fred Fontaine. This is the guy that a lot of the older people come back to talk about when Louie Mueller BBQ is talked about. He is the man who put it on the map. Wish i was alive to try his style. I just have the stories, which are just as good to give myself an imagination. Though this story was so interesting to watch , I would like to see more of this storytelling of big BBQ joints.
Al, kudos on another great episode that proves the only thing better than Texas BBQ are the people who make it. Thanks to Wayne Mueller for sharing the depths of your soul. It is a great life lesson for us all about not leaving anything unsaid with our loved ones. Your dad and grandfather are so proud of you. Thanks to you, we will never forget them. Great video! So many interesting techniques and mechanics here, but the whole story you help reveal is amazing!
There is even more here with John and LeAnn Mueller and their influence too, but Wayne seems to be very polite about all this. Btw, Franklin worked at Mueller’s at one point!
So one question is why doesn’t anyone build the brick pits anymore if the airflow is so tremendous? Obviously they are not moveable.
I can’t wait to see your cook of this style, but if the replication of a 1,000 gallon pit on a backyard pit is almost impossible, this may be even more difficult!

My first true Texas BBQ place. Before eating here, all I knew was gas station/fast food BBQ and I didn't know that I was not experienceing true Texas BBQ. I will always remember that WOW factor and that is what I look for when I go to any BBQ place these days. I recently moved to Houston from Austin and I had to go back to Louie one last time before I left. It was excellent as always.
I keep saying,'This is the best interview', and you keep proving me right. Every one is better.

Lived in Conroe Texas most my adult life , I was a Hiway Concrete Slipform contractor, Sllip formed the Concrete Median Barrier Safety Walks that divided Interstates and Safety Bridge Walls all over Texas, Can't belive I never heard of this famous place , Live in Alabama now after retirement , but will make trip to Texas this year to eat at Louie Mullers BBQ , Brother thank you for sharing your family story, Your life story mirror's my story of raising life and values. Al this is one of my got schooled to date. Having there lunch with Wayne must have been awesome. When I went to Texas in 2021 this was my first stop before heading to Austin!
Louie Mueller is the standard by which all Texas barbecue is measured. Thank you Wayne for doing this!
It's going to be fun to see other channels like Mad Scientist, Smoke Trails and Ant try to cook brisket the same way. It's like a primitive but simple solution to the aerodynamics. Just hammer the uneven part. Very cool to see this and for Louie to just let us in on their trade secrets.
I see a theme with BBQ institution owners….. Humbleness. Rare these days. Yes this guy needs to be remembered! He keeps the business alive and makes needed changes and tweaks to stay competitive while staying planted keeping with his family legacy. I'm sure your father and grandfather would be proud. I lived in Austin for years. I'm so happy someone has actually let Wayne tell his story. Wayne and his dad went through a lot when the other son went against them. Wayne, his dad, and grandfather are true legends of Texas BBQ.
BTW, I always have thought frankin BBQ is overrated and over hyped.
Mueller, in Taylor, Snows in Lexington, Blacks, Smittys, and Kreutz in Lockhart are the OG of Texas BBQ. All the rest are just newcomers.
