I think you would have gotten a better result. By sous vide technique. And then grilling. It's such a large piece of meat. That cooking at the consistent temperature by sous vide. Would have ensured the internal temp. I would do it again. Just to see which technique is better. But that's just me. 🤷♥️

Reminds me of the movie Great Outdoors (The Old 96er Paul Bunyon Steak). Of course this one here is a lot more than 96 ounces. It's actually called a Round Steak, cause it's made up of top round, bottom round, and eye of round. I wouldn't recommend grilling this for a steak.
