For the filling:
*400g/14oz roasted pumpkin, skin off (approx. 750g/1lb 10oz of raw)
* 60g/2oz Parmesan, grated
* 60g/2oz toasted breadcrumbs
* 2 tsp tahini optional
* Lemon juice, salt & black pepper to taste
For the sauce
* 3 tablespoons olive oil
* 3 garlic cloves, sliced
* 2 medium onions, sliced
* 100ml/4fl oz cream
* 160g/5ΒΎoz gorgonzola
* 1 bch Parsley finely chopped
* Parmigiano/pangratatto, to serve (optional)
