I love this high protein recipe because it’s simply delicious and is the perfect way to fuel my day. With 35 grams of protein per serving it simply can’t be beat.

Protein Scalloped Potatoes ( Makes 8 servings)

Ingredients
2 cup Fairlife Protein milk
1/2 tsp Red or Cayenne Pepper
4 tbsp Olive Oil
½ Sweet Onion
4 Large Bakers Potatoes (I leave the skins on for extra nutrients)
1 tsp Sea Salt
1 tsp Garlic Powder
3 tbsp White Flour
32 oz container Lowfat (1% Fat) Cottage Cheese
1 cup, shredded Lowfat Cheddar Cheese
16 oz cooked chicken, seasoned to your liking

Sauce
1. Caramelize half an onion and set aside to cool
2. Mix 3 tablespoons olive oil & 3 tablespoon flour until absorbed
3. Mix in 2 cups Fairlife Protein milk,1 teaspoon garlic powder, 1 teaspoon Red pepper flakes, Salt & Pepper to Taste until absorbed, set aside to cool
4. Add cottage cheese and caramelized onions to milk mixture, and blend with an immersion blender until smooth
5. Mandolin or thinly slice the potatoes to your preferred width
6. Grease a large casserole plan and create a heavy layer of potato slices, add ⅓ of rotisserie chicken on top, then cover with ⅓ of milk sauce mixture. Repeat this process 2 more times, and cover with a final layer of potatoes and milk sauce
7. Sprinkle the top with 1 cup of low fat cheddar
8. Bake at 350 for 1-1.5 hours (it’s done when a knife goes in and out smoothly from the center)
9. Eat your freaking delicious potatoes
