  2. Perhaps try regular oysters, then do the poppers in an offset smoker. Dude I used to know did his poppers in a smoker and I would never go back to grilled honestly. You'll find the latent sweetness of the pepper remains present, then the bacon, warm cream and filling are rich, while the smokiness throughout gives different mouthfeel that even comes out your nose. Then the heat rolls on as you finish it. I believe this would elevate your dish and put you ahead in the competition. Best of luck!
