  1. For everyones information: Cheddar does not melt, it sweats. The oil it secretes is the flavor of the cheese, but that's okay on a burger you just have to know what you're doing. By merely allowing the cheddar to sit briefly on the cook surface atop the patty the cheese will soften, you'll see the edges dip, and that's perfect. The oil will have sweated but it won't escape the burger Josh fucked up the cheddar by melting it, a LOT of the flavor is going to end up running out of the cheese and across the cook surface if you melt it under a bowel (aka the flavor). This is why when we make mac and cheese we melt the cheddar into a medium (usually creme) to capture that oil and all that flavor that the cheddar has.

  2. So pleeeease create a recipe fo a bun that is not that Instagram Brioche + thangzong + too much butter & sugar & egg too fat-thing. Create that perfect tasty "poor bread" burgerbun that needs the rest of ingredients, be brave, be educative…

  3. American cheese, mild sweet onion, Heinz mustard is a combo I really love. It's so dang simple, but so good.
    I also like American cheese, mild sweet onion, lettuce, tomato, mayo combo.
    Pickles are great but they have to be the the perfect flavor and thickness or it takes away from everything else. I absolutely love pickles on a burger but usually order them without because it's usually too think or not the right flavor lol

  4. Consider cutting some but not all of the ketchup from the sauce and switching out the pickles for sliced pickled hot cherry peppers on the top bun rather than the bottom.
    Also use spicy/brown mustard rather than yellow.

  5. why do I not like josh weissman videos anymore? I feel like it used to be an educational deep dive into a cool recipe. now its like lets rate the best fried chicken dish from every country! lets test out all the different burger possibilities! clickbait.

  6. My burger of choice is cheeseburger with mayo, pickle and onion. That's it. If I happen to go to Wendy's, I will put the chili sauce on it to add a little flavor. The simpler, the better!
    George was awesome.

  7. Burgers have mustard. This is true from the 1800s and Athens, TX where burgers were invented. Meatloaf has ketchup. Sandwiches have mayo. Burgers have mustard. I am not opposed to sauces on sandwiches (I make a sandwich sauce with yellow mustard, Miracle Whip, and Italian dressing). But burgers have mustard. It's a definitive thing. This is not unlike the 'debate' of tomatoes and beans in chili. Chili has neither. Can you make a great tasting dish with beans and tomatoes? Of course! I personally love beans. But chili doesn't have beans. Ever. By definition. Am I an originalist? Yes. The answer is yes. Burgers have mustard.

  8. Might get some scrutiny for this, but I feel like some raw onion is just as essential as the beef in a good burger. I also am aware that washing onions takes away some of the harshness, and I like that strong raw onion flavor, so, "the dirtiuh the bettah 😃"
