  1. The little girl was right, of course. When you are raised to expect raspberry honey chipotle mango flavor and all you get is meat, well, it must seem bland and uninteresting. She is a product of her culture.

    It's a different culture, which has different expectations. A friend from Texas was stationed in New Jersey and asked for a bunch of Taco Bell's Fire sauce packets. She was warned they were too hot to eat. She loved that she FINALLY got some heat.

    Smokecraft BBQ has a video on how to cook competition worthy chicken thighs. He makes the point that in cooking you cook several dozen chicken thighs to be sure you get 4 perfect ones to turn in, and that they will be judged on a single bite. No one would want to eat all of one of those thighs, much less a meal of them, the flavor is too intense.

    Bottom line, there's a lot of varieties of BBQ, and it's not surprising you didn't sway many people. You had a good time, and that's what is important. All in all, I'd rather have your q than what you had in Kansas City.

  2. I’ve cooked Kansas city style and was fortunate enough to cook in the Royal many years ago. That being said, I travel to Texas quite often and have grown to love the bbq. Preference is subjective

  3. Gotta chime in here… loved the video & the whole "change my mind" idea! But I gotta say, each meat is it's own animal (literally & figuratively)
    Brisket: Texas style all day everyday! (Don't ever sauce a brisket)
    Ribs: saucy & fall off the bone (KC style)
    So I'd say it's a tie at the end of the day 😂

  4. I live in Texas. I eat in KC all the time and like their BBQ. It’s not better than Texas. KC BBQ is sauced. Texas BBQ is all about the meat. The flavorless comments are just silly. Jack Stacks makes an incredible crown rib but their brisket is meh

  5. Great BBQ is like great Coffee, you like what you like and everyone is different…personally i love my BBQ sweet, smokey and saucey. living in KC is probably the reason why. if i had lived in Texas i would probably think different… all i know for certain is KC football is def superior 😏

  6. People who think barbeque should taste like candy aren't qualified to judge. I've never thought of Kansas City bbq as sweet heat. I've always known it as just thick and sweet. The heat I associate more with a Southern bbq that's sweet heat or a Carolina vinegar and heat. Sauce, IMO, has it's place. I prefer a dry rub on ribs. I'd never sauce a brisket or any beef. Pulled pork I'd use a sauce, either sweet heat or vinegar, depending on my mood. Chicken I prefer an Alabama white sauce. Sausage, a sweet heat or plain.
