Mexico – Carne apache: Very similar to ceviche having the beef marinating in lime juice for about 4 hours to overnight. Then mixing it with tomatoes, peppers, onions and a bunch of seasoning. served on a tostada.
France – Beef Tartare : The classic raw beef dish. Beef tenderloin chopped up fine mixed with shallots, mustard, capers, cornichons, and topped with a quail egg.
Armenia / Middle East – Chikufte : Extremely lean finely ground raw ground beef with onions, bulgar, pepper paste and a bunch of seasonings.
Italy – Carpaccio : Thin sliced raw beef tenderloin drizzled with a lemon, mustard, caper sauce. Served with arugula and shaved parmesan.
Korea – Yukhoe : Raw Beef tenderloin cut into matchsticks. Marinated in garlic, green onions, honey, sesame oil, soy sauce and gojuchang. Served over Asian pear and topped with a raw egg.
