Why put the sesame oil in so early? Almost always see it added after things are off the heat, because the flavor breaks down so quickly under heat.
Why does you gots a nife roll if you always take out the same one? Huh?

You should eat with chopsticks more often. You can't shovel massive amounts of food into your mouth when you've introduced a physical limitation like chop sticks.
They used to have "bbq" pork (char siu) in some areas. I liked it, but was never consistently available.
