  1. My fav way to eat beets is to make them into a beet curry ( very popular in Sri lanka, where my parents come from), it doesn't take very long to make. The curry is warm from a special blend of spices used for the curry power goes really well with the earthy ( Geosmin?lol) flavor of the beets, finished off with a touch of coconut milk in the end to bring a little creamy sweet taste really brings out the sweetness of the beets.. my mouth is watering as i write this. When i make a pot of beet curry, with the cooked greens on the side with some warm rice, i'm in heaven! Hope you give it a try, happy to share the recipe, perfect for the fall!

  2. You can speed up the cooking by using a pressure cooker. I use the recipe by Lorna Sass in her "Vegetarian Cooking Under Pressure" cookbook to make delicious borscht. Not the awful Mother's brand borscht you can drink from the jar, but real, rich borscht with Yukon gold potatoes, leek, carrot, savoy cabbage, fresh herbs, lemon zest, topped with Greek yogurt. Throw in whatever strikes your fancy.

    And I don't have one of those fancy insta-things, either: I've been using the same Presto 6-qt jiggletop pressure cooker since 1972.

  3. I just found, enjoyed and subscribed to your YouTube. This morning I harvested white beats, and collard greens, from my organic vegetable raised beds here in Greenpoint, Brooklyn.. I have an explosion of roquette and other goodies that I would enjoy sharing with you if you were close by? I am 78 years old, and may even ask you to help weeding. Warm regards, David

  4. I have loved beets my whole life (I'm 52). My aunt used to make me a tossed salad with beets (nothing fancy) and made the dressing using Marzetti slaw dressing or Miracle Whip, ketchup, and beet juice. I LOVED this salad and its dressing.

  5. I'm always willing to try a new preparation of beets but I've yet to come across a beet dish that doesn't taste like wet dirt. Beets taste like dirt because they contain a compound called geosmin (meaning “dirt smell”), so unless someone figures out a way for me to enjoy eating wet dirt I may never like beets.
