Skillet Roasted Lemon Chicken
RECIPE COURTESY OF INA GARTEN
Level: Intermediate
Total: 55 min
Active: 45 min
Yield: 3 to 4 servings
Ingredients
2 teaspoons fresh thyme leaves
1 teaspoon whole fennel seeds
Kosher salt and freshly ground black pepper
1/3 cup good olive oil
1 lemon, halved and sliced 1/4-inch thick
1 yellow onion, halved and sliced 1/4-inch thick
2 large garlic cloves, thinly sliced
1 (4-pound) chicken, backbone removed and butterflied
1/2 cup dry white wine, such as Pinot Grigio
1 fresh rosemary sprig
Juice of 1 lemon
Directions
Preheat the oven to 450 degrees F.
Place the thyme, fennel seeds, 1 tablespoon salt, and 1 teaspoon pepper in a mini food processor and process until ground. Pour the olive oil into a small glass measuring cup, stir in the herb mixture, and set aside.
Distribute the lemon slices in a 12-inch cast-iron skillet and distribute the onion and garlic on top.
Place the chicken, skin side down, on top of the onion and brush with about half the oil and herb mixture. Turn the chicken skin side up, pat it dry with paper towels (very important!), and brush it all over with the rest of the oil and herb mixture.
Roast the chicken for 30 minutes. Pour the wine into the pan (not on the chicken!) and roast for another 10 to 15 minutes, until a meat thermometer inserted into the thickest part of the breast registers 155 to 160 degrees.
Remove the chicken from the oven, sprinkle it with the lemon juice and the leaves of 1 rosemary sprig, cover the skillet tightly with aluminum foil, and allow to rest for 10 to 15 minutes. Cut the chicken into quarters, and serve hot with the pan juices, cooked lemon, and onion.

My chicken with lemon is bitter , always. Not nice at all
I've made skillet lemon chicken several times and the recipe is a real pleaser. It's a great presentation to serve it right in the skillet, and it tastes great. Another Ina home run!
Could you substitute 4 boneless chicken breasts (with skin on ) instead of the whole chicken? I think I will try that and find out! I am also wondering what to substitute for the white wine. Hmmm will have to research that! Thanks, Ina ! You have been my "go to" since forever !
Not only is Ina a great cook, she is also seem like a lovely lady. Jeffrey is a very lucky man to be blessed and married such a wonderful woman. I pray my sons and grandsons be as blessed.

I want her life, LOL. It looks like Heaven there.
Ina you’re not only a great chef. You are so kind too.

Most evil one in the cooking world, denying a dying child !!!
This is the recipe I break out when I want to impress people for dinner. There’s something so chic and simple about it. Only change I make is using Herbs de Provence. And I always serve it with a White Burgundy.
"Oh the sounds of East Hampton – private jets coming in" – that is an ICONIC line.

I’m so jealous she has a whole botanical garden
She really could have walked to her back door to get rosemary but decided to take a 5 minute detour through her gardens as a flex.
This is one of my favorite recipes to cook for friends and family. So delicious!

I'm 25 years old, and I've been watching Barefoot Contessa for as long as I can remember. It has always been my comfort show.
Now that Christmas is coming up, I thought of finally trying out one of her recipes and I think this would make for a great start! I'm sure they're going to enjoy this!
can you make this dish with cut up on the bone chicken such as pieces of legs, wing, thigh and breast?
Are you a real countessa? You live in a mansion!! And is interesting that you do your own cooking, and very good! The chicken seems delicious
I made this using French corn feed chicken – OMG 😋
Madam, I ❤You!!!
I’ve always wondered this about those brushes for braising. Isn’t it full of germs after basting raw chicken? Like do you only use it for raw chicken? How do you clean it?
She took all that time to walk around and show off her massive garden just to get the rosemary that was right around that corner… typical rich person behavior…. 7:40 7:56 8:02
Oh. I thought Ina was like, poor or something. Nice seeing her crib right across from where she works. Hear that’s big since CoVid. Great vid!
Any tips to deal with some of the bitterness? Remove lemon seeds? Peel the rind?
Ina, you are so beautiful.
