2 lbs pork shoulder;cut into bite size pieces
2 lbs country style pork ribs : cut into bite sizes
12 New Mexico or guajillo chile pods
2 chile ancho
Chile árbol (optional)
50-75 oz precooked hominy
1/4 onion
4 garlic cloves
2 bay leaves
1 tbsp chicken bouillon
1 1/2 tsp ground cumin
2 tsp oregano
1 tsp black pepper plus more to season meat
1 1/2 tsp salt plus more to season meat
8-10 cups water(depending on pressure cooker size)
