INGREDIENTS
4 slices thick-cut bacon – cut into 1-inch pieces
3 pounds (1360g) chuck roast – cut into 2-inch pieces
2 medium onions – chopped
4 cloves garlic – minced
3 ounces (85g) tomato paste or half of a standard 6-ounce can
1 12-ounce bottle of Guinness
2 cups (480g) low-sodium beef stock
2 tablespoons (30g) Worcestershire sauce
4 sprigs thyme
1 large bay leaf
3 medium carrots – peeled and cut into 1-inch chunks
3 medium Yukon Gold potatoes – cut into 1-inch chunks
2 large celery ribs – chopped into 1-inch pieces
salt and pepper – to taste
1 teaspoon sugar **optional**
For cornstarch slurry (optional)
1 tablespoon cornstarch
1 ounce water

Great that you remark about importance of scraping the "bottom" of the pan. HOWEVER you don't seem to scrape the SIDE of the pan at all. There is so much flavor stuck to the side that you are not reminding viewers about. Don't cut weight, try to wrestle close to your natural weight and you'll be stronger against everyone that has killed themselves to cut a weight class or two.
First that stew is not a real Irish stew. The potatoes and the tomatoes are American and have been since Columbus re-discovered America in 1492. Also ,even then much of Europe and other areas were not privy to these things until much later in time. 2nd, the beef was most likely not used because it was a luxury for the elite not the average person and Ireland was a very poor country. They used Lamb or deer meats.
Why take out the fat? Would this be something that would traditionally have been done in an Irish stew from, say, a few hundred years ago?
