Beef Patty Melt: a double patty, double cheese, caramelised onion, and chipotle in an adobo sauce. Is it a burger or a sandwich?

Here is the recipe

Ingredients – 

2 Tbsp (40ml) – Avocado Oil or Olive Oil
2 Tbsp (28g) – Unsalted Butter 
2 – Brown (Yellow) Onions, Thinly Sliced 
1 Tbsp (20g) – Brown Sugar
1 Tbsp (20ml) – Balsamic Vinegar
400g (28oz) – 80/20 Beef Mince – Makes 4 x 100g Patties
Swiss Cheese Slices 
American Cheddar Slices 
Bread of Choice
Butter to Spread 

Method – 

Add butter, olive oil, onions, salt, and pepper to a pan over medium-high heat. Stir well and cook for 45 minutes or until onions are caramelised, stirring occasionally. Set aside. Add brown sugar and balsamic vinegar and cook for 2 minutes. Remove from stovetop.

Divide the beef mince into even-sized patties.

Spread the butter over the outside of your bread and toast in a dry pan over medium-high.

Add 1 tsp of avocado or vegetable oil to the same pan over medium-high heat and place in the patties. Place over a sheet of baking paper and squash down. Season the patty well with salt and pepper and sear for 2 minutes. Flip and cook for 1 minute, then add one slice of each cheese and cook for 1 more. Cook remaining batches, if any.

Spread both pieces of bread with smoky mayo, top with 2 patties per sandwich and caramelised onions and place over the top piece of bread. Lightly push down and serve. Dig in.
