I agree about the lack of consistency in KC bbq restaurants, but when it's good and done right, I dont think any state can compare. The Texas bbq I tried didn't impress me at all. Some of the joints lacked flavor and I'm not a big fan of a lot of pepper on bbq. Then again, maybe I just didnt visit the right places. Kansas City is known for its bbq and some of the best is not in your restaurants but we have some of the best backyard pit master in the world. 😎

The best BBQ could possibly be your own if you yourself are experimental, adaptable, scholarly, adventurous, disciplined and consistent. Inspirational food, fun and family loving energies flowing tend to help as well as long as you have the time, energy and focus to go along with it. BBQ is demanding in its own ways but its so good that one should celebrate and innovate the processes.
There is no such thing as “better” just different styles and you – get this – YOU CAN ENJOY BOTH. WOW 😳

Look at how many BBQ restaurants in KC cook with offset smokers; then look at how many in Texas use offsets. The Texas places put in the effort to do it right, and their results are consistently more flavorful and tender.
Texan here – agree – our pitmasters are held to an insane standard. That said – those KC burnt ends and whatever they call those beans I had last time in KC are dam good.
Same in Nashville went to a few spots – great bbq with a different flavor. To your point – regardless of where you are in Texas – it’s hard to have bad BBQ here
Steve, have you ever tried the pork from a good old fashioned "pig picking" here in the deep southside of Virginia?
For me its carolina BBQ followed by Texas beef bbq (dino ribs #1 of all though)
Bite Me BBQ in Wichita was the best of all I've visited (SC, Texas, Georgia, Cali, AZ, NM).

I just love BBQ. I used to travel for a living, and I've enjoyed different styles from almost every state. I must say that Texas style is my favorite.

I'm born and raised in Austin, TX and 47 years old. I've seen the change in BBQ here and I love it. I grew up with a salt and pepper only BBQ with sauce on the side and that's how it should be. I know this is controversial but putting sauce on your BBQ upfront is giving you an out for mistakes. Be brave and show me what you got!
It's really sudenly how yt send me this vid being in São Paulo Brazil. Dont get me wrong guys I love barbecue and wanna give my own opnion. I already roast brisket and i would say I prefer other cuts like prime rib. I really sugest If Someday you have the opportunity, try Brazilian style, Rio grande do sul, Goiás or Minas gerais

Bullshit !!! Guys he has no ideas about KC BBQ AT ALL!
Being a resident of KC, consistency in quality is an issue for a lot of BBQ restaurants here. One out of 5 times you get a great product that is impressive. Two out of those five times it is good but in the way a quarter pounder is good. Yes it is a hamburger, but you know there is a lot better our there. The remaining two out of 5 times what you get is somewhat disappointing. Quality of meat is off, portions too small, etc.
Last week I went to Gates on the Paseo. Got the double beef. Was pleasantly surprised on the amount of brisket and the quality of the meat. It was a great sandwich (KC BBQ brisket is thin sliced and meant to be eaten on bread/bun with sauce). Have had similar experiences at several other restaurants as well. With that said some places are always in the good to great range. Q39, Jack Stack and Joe's come to mind for me.
Very much looking forward to a trip to Texas to get some of that great looking brisket. It always looks so good on these videos!

Whether Texas style barbecue is better or Kansas City style is better I duno. I also wonder if the Kansas City Chiefs is better than the Houston Texans. But that can also be debatable for they have the referees on their sides also😅
It's not a case of one being better than the other. It is simply what each individual enjoys in their personal flavour profile
I would argue some of the inconsistency in KC barbecue is because the sugar and sauce hide a lot of sins. Mediocre KC barbecue is… fine, but mediocre Texas barbecue is bad to borderline inedible.

Arguing bbq “best” is no different than cars, computers, or smokers. Eat what you like. Make what you like. Use what works for you. Bias and prejudice are useless wastes of energy and neurons.

Personal opinion: I find KC BBQ does better with pork where TX BBQ does Beef better.
I live in KC, but I personally smoke Texas style brisket at home. I'm going to argue the consistency portion of Texas style BBQ that seems to be an almost Toyota reliability cult in the comments, and with youtubers. I traveled to Austin and spent hundreds of dollars at Franklin BBQ. The journey to BBQ mecca was high on my list and the trip cost a lot on top of the food. The brisket I was served was so salty it wasn't edible. It was probably the most perfectly cooked brisket I've ever had, but we couldn't eat it, and threw most of it out. I'm sure someone over seasoned it, and if I went back my experience would be better, but am I going to risk it, not likely. Having said that this was during the covid era when you'd order online, and they'd place the order in your trunk so I had no opportunity to talk to anyone to see if that's how it's supposed to taste or try to get my order remade. The rest of the BBQ from Franklin was very good, but nothing blew me away. I cook Texas style at home so I obviously prefer Texas style brisket, but sausage, chicken, etc., is a toss up between Texas and KC. But brisket is king, and it's not even close Texas all the way.

To me it is not close, Texas BBQ all day every day. I think in general you made some good points. Texas is beef skewed / S&P and KC is morning white meat skewed with sweet sauce. For me, if you have to sauce the meat, there's a bit of a problem. Also, the vast majority of KC brisket is not good at all. Texas is just a lot more consistent from place to place for all meat and they have some of the best smoked turkey. There's some good KC BBQ but I find Texas so much better. Also, there's "Texas Style BBQ" in KC…….I've never seen a "KC Style BBQ" advertisement or restaurant in Texas. There's a reason why

I've been doing keto, so I default to TX style brisket and smoked pork butt with a Carolina style sauce – as far as pork ribs, I just dry rub the heck out of them with salt, pepper, smoked paprika, cumin, garlic powder and a whole lotta chili powder – depending on what I'm in the mood for as to which chili powders I use
