Slow Cooker Italian Beef Recipe
Serves: 4-6
2 ½ lb. chuck roast
¼ C avocado oil (or any light oil)
1 medium onion, cut into large slices
6-8 whole pepperoncini
½ T Italian seasoning
½ tsp. dried thyme
1 tsp. crushed red pepper flakes
4 garlic cloves, smashed
2 bay leaves, dried
1 ½ C beef broth
1/3 C red wine
1/3 C pepperoncini juice
Kosher salt and ground black pepper
Cook’s note: I use a 10-quart slow cooker for all my recipes.
I shred this beef after cooking and make delicious Italian beef subs…..soooooo good!
Season both sides of your roast liberally with kosher salt and ground black pepper.
Now add the beef to the slow cooker along with the rest of the ingredients: onion, pepperoncini, Italian seasoning, thyme, red pepper flakes, garlic, bay leaves, beef broth, red wine, pepperoncini juice. Put your lid on and let it go for 10-12 hours on low.

I like to serve mine on fresh hoagie rolls with some provolone and giardiniera. I just toss the subs under the broiler for a few minutes to get the cheese nice and melty. Add the giardiniera once out of the oven.
