INGREDIENTS
4 tbs extra virgin olive oil
1 or 2 tbs capers
1 or 2 tbs kalamata olives – pitted and cutted in half
6 oz fresh tuna fish
1/2 glass white wine
1 pinch salt
1 pinch black pepper
1 cup plus 2/3 cup tomato purée
1 or 2 tbs Italian parsley – coarsely chopped
1/2 lb Italian pasta (penne rigate)
STEPS
1 – Heat on medium a frying pan with oil. When the oil is hot, add capers and olives, stir and cook for a couple of minutes until simmering. If you like, add to the oil clove of garlic punched with a toothpick or a fork (to avoid oil splashes) and be careful not to toast it.
2 – Add the diced tuna fish and cook until light brown. Deglaze the fish with wine and let it cook until the sauce thickens.
3 – Season with salt and pepper. Then add the tomato purée and stir occasionally.
4 – In the meanwhile bring to boil plenty of salted water for the pasta and cook it “al dente”.
5 – When the pasta is cooked, drain it and add to the frying pan with the ready fish sauce. Add parsley to the tomato sauce (and take the garlic clove off if you have added it at the beginning). Cook for just a minutes and serve.
