I’ve been using this recipe for 10 years and I will not change it! The best way to cook pork belly
Ingredients:
The first pork belly:
pork belly – 1 kg (2.2 lb)
water – 1.5 l (3.31 lb)
vinegar – 30 ml (1 fl oz)
salt – 15 g (½ oz)
sugar – 30 g (1 oz)
TO BOIL 45 minutes
sweet paprika – 10 g (0.35 oz)
black pepper – 10 g (0.35 oz)
salt – 10 g (0.35 oz)
spicy paprika – 5 g (0.18 oz)
garlic – 3 cloves
IN THE FRIDGE 3 H
The second belly pork:
water – 1.5 l (3.31 lb)
herbs of Provence – 10 g (0.35 oz)
bay leaves – 3 pieces
salt – 20 g (0.7 oz)
Boil it, then leave it to cool down
pork belly – 1 kg (2.2 lb)
TO MARINATE 6 H
garlic – 3 cloves
black pepper – 10 g (0.35 oz)
IN THE OVEN 180 °C (356 °F)/1 HOUR
honey – 20 g (0.7 oz)
sweet paprika – 10 g (0.35 oz)
juice from the meat
IN THE OVEN 180 °C (356 °F)/10 minutes
