Where are the scotch bonnet peppers? How can you make jerk seasoning without the scotchie? Without the scotchie, that is not jerk seasoning. Why is it so difficult to see authentic jerk seasoning. BTW, I'm from fairy hill district in Portland. Right up from Boston Beach.

Things I took from this was the jerk seasoning and the pimento in the cast iron pot, that’s gonna take my dishes to a new level, i have a smoker, so I’m gonna switch up a bit, parboiled a bit longer, then smoke, I use hickory pellets about the size of pimento, but I could almost taste it already, Thanks Chef. Instasub this ya. Best technique I’ve seen, by far.
