Serve with some pineapples and mangoes. The sweet fruit balances the heat of the jerk, for those who cannot handle a bit of heat. Some Jamaican Rum finishes it off perfectly.

Painful watching peeling ginger with that weapon, just use teaspoon. (Yes I do understand some of the ethos behind the channel)
You can soak pimento (allspice) berries and use that to make smoke.
