🛒 Ingredients:
For the Pork:
Pork tenderloin/Pork Fillet
Streaky Bacon

For The Stuffing:
Half an Onion
Fresh Breadcrumbs
Garlic
Fresh herbs (parsley)
Dried Thyme
Ginger Powder
Sultanas
Dried Apricots
Stem Ginger (Including some of the syrup)
Lemon Juice & Lemon zest
Olive oil

For the Ginger Cream Sauce:
Pan Juices
Ginger Wine
Double cream
Cornflour Slurry mix to thicken

🔥 Instructions:
1️⃣ Cook the onion & garlic in a little butter for 5 minutes, then leave to cool.

2️⃣ Add all your stuffing ingredients (chopped as necessary) to the cooled onion and garlic mixture.

3️⃣ Butterfly the pork tenderloin, place it over the bacon, and stuff it, ensuring the filling is evenly distributed.

4️⃣ Roll the pork tightly, wrap it in cling film, and let it rest in the fridge until ready to cook.

5️⃣ Roast the pork in the oven at 180°C fan (356°F) for 45 minutes or until juicy and golden.

6️⃣ Remove from the oven, cover, and rest.

7️⃣ Deglaze the pan with a little water over medium heat, scraping up all the delicious bits.

8️⃣ Strain the pan juices through a sieve into a saucepan.

9️⃣ Add ginger wine & double cream to the strained juices, then thicken with a little cornflour slurry.

🔟 Slice the pork, drizzle with the ginger cream sauce, and enjoy!
