Kakuni Don (Japanese braised pork belly) Recipe!
The kakuni don is an umami filled Japanese braised pork belly that melts in your mouth!
[Ingredients]
1 thick slab of pork belly
Bundle of scallions (green part)
Block of thinly sliced ginger
Water
[Sauce/Marinade Ingredients]
500ml broth from above
1 packed bonito soup stock (optional)
100ml each of soy sauce, mirin, sake
2 tbsp sugar
1 tbsp each of water & potato starch
1. Put the initial ingredients above into a pot, cover pork with paper towel, bring to boil as you scoop out the foam, then simmer in low heat for 1 hour.
2. Take out pork & cut into bite-sized pieces.
3. Scoop out 500ml of the broth, optionally mix with packet of bonito soup stock (can make dashi from scratch for even more flavor).
4. Put pork into empty pot along with broth/soy sauce/mirin/sake/sugar.
5. Cover pork with paper towel, bring to boil, simmer for at least an hour.
6. Gently take out pork, sear both sides.
7. Optionally heat & mix sauce with potato starch mixture.
8. Put everything on top of a bowl of rice, along with boiled eggs & sesame.

Can you explain what's the paper towel for?
This is one of my favorite things to cook!

Is it safe to have the part towel there the whole time? Particle wise so not ingesting paper crap? I usually use paper towels at the end of cooking certain dishes. Btw after your takoyaki vid I subscribed immediately. Love your recipes and your fabulousness! ❤
