James, Use the D&C ring to set the heat deflectors on to the charcoal basket tabs. They will fit on the bottom ring and you can lower them down on to the tabs.
I think you have figured out a lot of important improvements based on the most important parameter and that is taste. Being an Electrical Engineer, I would like to understand the scientific reasons behind why it works, but tastes is what counts. Thanks for showing us how easy it was to assemble you new grill and that is much easier the my other colored egg. I would love to have storage under my egg too. Being an engineer, I wouldn't trust a friction fit between a piece of metal band and ceramic to lift your Kamado Joe. Can't wait to hear about the testing later this year.

Could you just clarify, with the slow roller, does it mean the new temperature range only applies to post 2023 models, or all slow rollers. Had mine September 2022.

What is the height of the shelf your BJ3 sits on?
Yes; a lot has changed in 4 years. I added a KJ after watching your channel a few month; 4 years ago. And I thought I never would. Still use my Webbers as well. (WSM, portable for the RV, Natural gas grill for back deck). I've learned a great deal and thank you for your guidance..
Been watching without a grill four a couple years. Moved from an apartment to our new home last month: just ordered my Kamado last night – perfect timing for this video!!!
Great video. Why didn’t you use the series one for the test and have two series 3’s instead?
When I put my BJ3 together (2+ years ago), I noticed that all the holes in the firebox “petals” had waste in them blocking maybe 10% – 15% of the hole. I contacted KJ and they said it is normal. I didn’t see this on yours. I noticed now that when you (James) say to set the lower draft at 1 finger, it will take 2 fingers for me. Is this normal? Should I try to clean the holes? How?

I must’ve hit the lottery, my slow roller says 500°F. I just picked it up on Friday and I’m doing ribs for my first cook on it today.

I’m going to try that. I have trouble with adding wood to the bottom as I don’t get hot coals like you do on the bottom. Thanks for the tip. I bought the basket immediately as per your tips.

perfect timing on this video. im assembling a "frankenjoe" big joe that ive slowly pieced together over the last year. scored a free base and free dome, bought some used gear, on sale new gear, and new parts gear from kj. assembling everything from scratch. any other links to raw assembly of kj cooker is greatly appreciated. want to make sure i get the bands and hinge assembly correct.
I got a new Big Joe Series 1 in February after much lurking on your channel. I love mine. I used it to make pizzas yesterday running ~700°F for only a few minutes, and today I'm doing a plate of Beef Short Ribs running ~275°F for several hours. I mean, how versatile is that?!
Also big shout out to Kick Ash cans for amazing customer service. I emailed them asking if they had any scratch n' dent cans, and he wrote me back and said he had a new batch to inspect and would let me know. A day or two later he sent me a photo of one with a dent and offered it to me for $10 off! I am so impressed; they have a customer for life in me.
Anxiously awaiting those videos showcasing the Weber smokey mountain or an update on the Weber Summit Kamado.

I have had my BJ3 apart many, many times and cannot, no matter how hard I try, get the bands aligned so there isn't a problem with the latch. Like ever. (The bands have been replaced too.) I've had to settle with literally lifting the latch itself a fit to get it to lock. Likewise the lid always sags down a bit after opening no matter how much I adjust the hinge bolt. I mean we live in an era of manufacturing precision that should mean these kinds of things just would not be an issue. It's called a threaded bushing KJ, look it up! It's also called welding-the-bolts-on-the-rings so they don't strip. (Oh ya, the guys who put my Joe together on delivery did a bang up job on 4 or 5 of the ring holes which have these truly awful little ridges which are supposed to interlock with the bolt heads. The powder coated paint used the rings does a nice job of filling in these ridges so the bite on the bolts is negated 25 to 40% – did I mention the stripping problem?!) The BGE is even worse which is why I didn't go for one of those either. Don't get me wrong, the cooking results I've gotten from the Joe have been spectacular, based in no small part to James' amazing channel here, but having owned a BJ3, for coming on 3 years now, I don't think I'd buy one again.
I have a big-joe in a cabinet with granite top, love it with one exception my joe doesn't get hot enough no matter how much charcoal i put in it.
Problem is airflow. My solution was to install a variable speed computer fan in the door pointed at the air flow door. Worked perfectly!
This makes me want to get a Kamado big joe. [might get one after I am done upgrading my patio cover/workshed]
I Am A Primo XL400, But i am thinking of getting a big Joe s1 Is there any advice you could give me to look out for?
I’m about to put in a warranty claim on mine – every time I remove the basket my fire ring pops off and I need to spend time re-inserting the ceramics…. It’s seriously distorted. Only had it 6 months and for an expensive grill it’s a PiA and really increases time to get it going…
