Oh I like the lasagna stuffed peppers idea using ricotta cheese (not a fan of spinach, however, parsley 🌿 would work nicely); grr8 idea!

De~lish! As much as I like zucchini noodles, lately, I've been loving spaghetti squash noodles, especially roasted w/garlic until it's all carmelized & browned. Oh my word~ best ever for everything from chicken alfredo to beef stroganoff, asian inspired~ basically anything. I even like to eat them plain- as is, w/some salt & pepper, little extra butter or olive oil. Something about the texture & the sweetness you can coax from it, just as easily it can be a very fresh, more vegetable-type crunch for a cold salad. Quite versatile, imho, based on how it's cooked, & at what temps~ can get a lot of different textures & flavors from spaghetti squash. I'm sure many are already quite familiar, but I just discovered them a few months ago=)
