Wes, love how you speed up the mixing, thanks. Idea,…for either recipe, how about adding ground psyllium husk or ground flax seed? More fiber and maybe add more bulk for the "wet" recipe. Love your channel.

Ohhhhh….I love pumpkin bread❤. On Christmas morning as a kid, my Mother made pumpkin, strawberry, and zucchini breads in old coffee cans. She had flavored cream cheeses before you could buy them at the grocery store.
My experience with keto pumpkin muffins has always been … spongy. Your detailed assessments always provide a nuanced context and are so much appreciated!
I made the suggested changes of doubling the pumpkin spice and added more sugar to the first recipe, oh and a bit of salt as well, however, I still think it could have used more sugar substitute (maybe a cup} and I had to extend the cooking time up to an hour. I didn't make the icing, but agree that would help.

I always made pumpkin bread pre-keto. I missed it, then I found Carolyn Ketchum's pumpkin bread and it is great. I always add more spice because I like a lot of spice. Those dogs are adorable!

To me as a European, I always have to translate the term "bread" to "cake" 🙂 I mean, banana bread, pumpkin bread and the like are more cake-like than actual bread. I know You are probably aware but didn't mention that every coconut flour can have a very different absorption rate.
So if Your flour was not very 'dry' Your product would be wet but if her's was extremely 'dry' it might absorb to a much greater degree leading to a possibly more desirable product… 🤔
Food for thought. Won't get too much carbs or calories from that 🤪😂

I miss Starbucks pumpkin bread so very very much and that first option looks like it’s also easier to make as you don’t have to whip out the portable mixer. I just saw a cordless portable mixer that I’m going to investigate by KitchenAid, just FYI in case that works for you too.thanks for all you do to bring low-carb recipes into our lives.
