Marination (10 mins):
300g chicken breast (small popcorn cubes)
1 tbsp curd (15g)
1 tsp ginger garlic paste
½ tsp Kashmiri chilli
½ tsp red chilli
½ tsp black pepper
½ tsp sugar
½–¾ tsp salt
½ tsp lemon juice
1 tsp oil
1 whole egg

Wet Slurry:
4 tbsp maida (30g)
3 tbsp cornflour (24g)
½ tsp Kashmiri chilli
½ tsp chilli powder
½ tsp salt
1 tsp oil
Water → thick, flowing batter

Dry Coating:
60g maida
30g panko breadcrumbs
2 tbsp cornflour (15g)
½ tsp salt
½ tsp pepper
½ tsp chilli powder
Tiny pinch baking powder

Coating Method:
Slurry → dry mix → slurry → dry mix
(Press gently for popcorn texture)

Airfryer:
200°C × 8 mins
Rest 1 min
200°C × 5–6 mins
Oil spray both rounds

Finish:
1–1.5 tsp peri peri seasoning
Serve hot with spicy mayo
