Lamb rack is a delicious cut of lamb, but I love the charing you get from BBQ, so cutting the rack into cutlets after cooking, is a perfect way to introduce more charred surface to an already tasty dish

If you're putting grill grate marks on your meat without developing a proper crust, that should be illegal
