Steamed beef dumplings are absolutely delicious and a must-try of Chinese dishes. I will show you how to handle the beef, how to make Chinese dumplings, and how to steam your beef dumplings.
The total preparation and cooking time for our steamed beef dumplings recipe (饺子)is about 2 hours:
📌Tools:
Working top or a big board,
A rolling pin,
A shredding plate,
A skimmer,
A big steamer,
Non-stick parchment paper,
One big bowl for dough and another bowl for fillings
📌 Ingredients for the dough:
❣️700g of plain flour (this may be more than you need, but it is always better to have more dough than unfinished fillings)
❣️half a teaspoon of salt
❣️200ml of boiling water
❣️150ml of room temperature water
📌Ingredients for the filling:
❣️500g of ground beef (recommend 15% fat)
❣️700g of white radish
❣️3 spring onions
❣️5 slices of ginger
❣️3 tablespoons of light color soy sauce
❣️1 tablespoon of dark color soy sauce
❣️1 teaspoon salt
❣️1 tablespoon of oyster sauce
❣️1 egg
❣️Half a teaspoon of Chinese five spices powder
❣️5 tablespoons of pure sesame oil
📌Preparations:
1. Make the dough
👉Add half a teaspoon of salt in the flour, mix well.
👉Add 200ml of boiling water in half of the flour, mix well
👉Add 150ml of room temperature water in another half of the flour, mix well
👉Knead a smooth dough, spend about 10 minutes
👉Cover the dough and set aside at least 30 minutes
2. Make the filling
👉Add everything except radish in the ground beef, mix in one direction until it becomes heavy, set aside
👉Shred the radish, use the shredding plate is much faster and more even.
👉Blanch the shredded radish, then boil the shredded radish in a big wok with boiling water for 30 seconds. Take out the boiled radish with a skimmer, and put the radish in a big bowl of cold water.
👉Squeeze out the water from the radish by hand.
👉Roughly chop the radish and put in the bowl of the seasoned ground beef (only mix with the beef right before making the dumplings. This will prevent the radish from releasing more water)
3. Make the dumplings
👉Cut a quarter of the dough and knead a bit more to make it smooth.
👉Roll the dough into a tail shape with 2.5cm diameter
👉Cut the tail into 2cm long pieces, press each piece with your palm, then roll the piece into a circle with 9 to 10cm diameter
👉Mix the radish with the beef evenly
👉Put one tablespoon of the filling in the center of the circle dough, fold it into a dumpling, continue until you finish all the fillings
4. Steam the dumplings
Line up the steam basket with the non-stick parchment paper,
Arrange the dumplings in the basket, leave a bit of room between each dumpling
Boil the water and put the steam basket on the steamer for 15 minutes.
