Legendary Crispy Fish Sandwich

Beer Batter:
1 cup all-purpose flour
2 tbsp rice flour
2 tbsp corn starch
2 tsp salt
1/4 tsp baking soda
1 tsp garlic powder
2 tsp onion powder
2 tsp paprika
1 1/2 cups extra cold lager beer

Tartare Sauce:
1 cup good-quality mayo (Hellmann’s or Kewpie for extra richness)
2 tablespoons finely chopped dill pickles (or sweet pickles if you like it sweeter)
1 tablespoon capers, chopped (adds a nice briny pop)
1 tablespoon fresh lemon juice (for brightness)
1 teaspoon Dijon mustard (adds depth)
1 teaspoon Worcestershire sauce (optional, but gives umami)
2 tablespoons finely chopped fresh dill (or 1 teaspoon dried)
2 tablespoons finely chopped tarragon
1 tablespoon finely chopped shallot or red onion
½ teaspoon garlic powder
Salt and freshly ground black pepper to taste

I love how fast deep frying foods cook. your cardiologist may not, but to make some beautiful oven or stove based cod dish is gonna take a solid hour with prep and cook time and the sides or sauces. this tastes the best and takes ~4 minutes. I’d eat this every day if I could. it’s deep fried but it’s also fish which negates the deep frying
