Pastina Recipe:
1 cup Barilla Classic Pastina
1 Tbsp olive oil
4 garlic cloves, minced
1/4 tsp red pepper flakes
zest from half a lemon
1 Tbsp lemon juice
3 cups chicken broth
1 tsp salt
1/4 tsp pepper
2 Tbsp butter
2 Tbsp parsley
1/4 cup Parmesan cheese
-In a sautΓ© pan over medium heat, add olive oil. Mix in garlic and red pepper flakes and cook for 1 minute. Add lemon zest, lemon juice, and 3 cups chicken stock. Mix and bring to a simmer.
-Add pastina, stirring occasionally for about 7 minutes. Pastina should be tender and covered by a thin layer of stock.
-Add salt, pepper, and butter. Mix until butter has melted. Turn heat to low and add parsley and Parmesan cheese. Turn off heat and mix.
-Top with a drizzle of olive oil, Parmesan cheese, parsley, and fresh cracked pepper. Enjoy!
