  1. Lobster Risotto 🦞 Episode 19 | Date Night Dishes. Lobster, saffron and a glass of wine… the PERECT date night vibe. Can’t beat it! Full Recipe below 👇

    Risotto
    Serves 4
    * 2 tbsp olive oil
    * 2 shallots, finely diced
    * Sea salt, to taste
    * 300g arborio rice
    * 1 small glass of white wine
    * 1 litre stock
    * 4g saffron – crushed into powder, bloomed in a few tbsp of the stock
    * Generous grating of parmesan
    * Few knobs of butter

    Lobster:
    * 2 lobsters
    * 200g butter, cut into cubes, cold
    * 2 tbsp water
    * 2 cloves finely sliced garlic
    * Chives to garnish
    1. Make a beurre monte by slowly whisking in the 200g of cold butter to the water. Keep temperature over a medium-low heat whilst cooking.
    2. Once ready, add the lobster tails to the beurre monte, baste with the butter, cover with a lid then leave to poach until just cooked through.
    3. To make the risotto, sauté the shallot in the olive oil over a medium heat until translucent. Add the rice then toast for a few more minutes. Turn heat to medium-high, then add the wine and cook until mostly evaporated.
    4. Gradually ladle in the stock, continuously mixing over a medium heat, until it has all been absorbed and the rice has cooked through. Add the bloomed saffron halfway through.
    5. Add in the parmesan and butter and parmesan, season with salt and pepper to taste then mix together until emulsified.
    6. Serve the risotto in a plate with the lobster tails, some freshly chopped chives and a drizzle of the poaching butter.
