That is very clever using bread at the bottom to soak up the grease.
I like to use a bed of Cabbage, green peppers and onions in the bottom. Seasoned with salt pepper and minced garlic. I also make twice the amount of sauce and pour some over the vegetables, then keep adding it on top as it bakes down. With mashed potatoes, the vegetables and tomato gravy is done.

This meatloaf is so delicious! Unfortunately they took it off the menu at the PDFK in Foley at OWA. It was always one of our favorites.

looks SO good!!!! It's basically how I've made meatloaf, but that SAUCE is a MUST to try next time!
Maybe a small piece of Parchment Paper on top of the bread would still let the grease drain, but not make a mess of the bread.
